We have been trying different Vegetarian recipes this month for Veganuary (We couldn’t give up everything and go Vegan but we wanted to try not having meat). So when looking for different recipes I come across this recipe in our new recipe book. We have never tried Stuffed bell peppers so why not give it a go? Looking over the recipe I decided to change it slightly. So this is my CousCous Stuffed Bell Pepper Recipe. You can also change the recipe to suit you
Ingredients:
- 3 Bell Peppers.
- 2 packets of Dried Instant Couscous.
- 1 Red Medium Onion (diced).
- 2 Carrots (diced).
- 3 Tbsp of Canned Diced Tomatoes.
- 3 Tbsp Sweetcorn.
Method:
Preheat the oven to 200’c.
Boil the kettle. Meanwhile, empty the couscous into bowls (if your only using 1 flavor don’t worry about separate bowls. I used different flavor couscous). Once the kettle is boiled pour over the correct amount of water and let sit for the designated time to cook.

Dice all the Carrots and Onion.
Once the Couscous is cooked mix through the carrot, onion, sweetcorn and diced tomatoes.

Cut top of the Bell peppers. Slice in half and deseed.

Place all the peppers in a pan and stuff with the couscous mixture. Fill them as much as you want.

Place then in the middle of the oven for 20 minutes.
Once cooked remove them, serve and enjoy.

Mhmm this looks so good. I’m s vegetarian and never have stuffed peppers so I might give this a go.
It was so nice – I’m not a fan of bell pepper normally but this was yummy x
