Its been a while since I have done any baking with Baby bear. I’m not sure why either, life just got on top of things I guess. I encourage him to help me prep dinner most nights but we haven’t actually baked anything in a while. It was so good to spend time baking with him again, I need to do it more often (there go our waistlines…). So here is my easy cupcake recipe.

Ingredients for cupcakes:

  • 110g Butter.
  • 110g Sugar.
  • 2 Large Eggs.
  • 1tsp Vanilla Extract.
  • 110g Self-raising Flour.
  • 2tbsp Milk.

Ingredients for Icing:

  • 80g Icing Sugar.
  • 160g Butter.
  • 1tsp Vanilla Extract.


Preheat the oven to 180′ and place cupcake cases in a cake tin.

Put the sugar and butter into a bowl and cream together until smooth.

Add the eggs and vanilla extract into the mixture and beat together.

Tip: let your little one crack the egg in a separate bowl…There will be shell in it.

Fold in the self-raising flour. Add the milk in slowly until a smooth dropping consistency.

Using a table spoon and tea spoon, fill each cupcake case around half way full.

Place them in the middle of the oven for 12-15 minutes. Once cooked, place the cakes on a cooling rack until cooled and ready to ice.

While they are cooling, put the butter into a bowl and slowly add in the icing sugar mixing it together. Once all mixed together add the vanilla extract and mix through.

Ice your cakes and enjoy.
