We have such a sweet tooth in our house so when we found the recipe for these cookies I couldn’t wait to bake them and see what they were like. Its also a huge plus that they are slightly healthier so we get to eat 2 or 3 right? Thats how it works isn’t it?

I was slightly dubious the first time cooking these as they have peanut butter, porriage oats and raisins in. However, once I baked them once they have become one of our favourites. So this is how you make them.

Ingredients:

  • 100g Peanut Butter
  • 100g Butter
  • 150g Light Soft Brown Sugar
  • 2 Eggs
  • 150g Oats
  • 50g Plain Flour
  • 1/2tsp Baking Powder
  • 100g Sultanas

Method:

Preheat the oven to 200’c and line a baking tray with baking paper/tin foil.

Put the butter, peanut butter and sugar into a large mixing bowl and mix together until completely smooth.

Crack both eggs into the bowl with the mixture and beat until smooth.

Add the oats, flour and baking powder into the bowl of mixture and fold until all mixed together.

Add in the Sultanas and mix them throw.

Take small, even sized spoonfuls of mixture and put them onto the baking tray. Make sure you leave about 5cm between each cookie.

Cookies ready for the oven

Bake for 10-12 minutes until golden brown. Once you have removed the cookies from the oven leave on the baking tray to slightly cool before placing on a cooling rack.
