I like to try and switch breakfasts up in our houses every now and then as it becomes so repetitive. One of my favorite goto breakfast treats for Baby bear is my banana pancake recipe. They are a huge win in our house. Baby bear loves bananas and its healthy which mumma likes. They are so easy to make and only includes ingredients you have around the house. That’s the best type of recipe in my opinion. So here’s how I make my version of banana pancakes.

Ingredients:

  • 1 Ripe Banana
  • 2 Eggs
  • 1tsp Cinnamon (Optional)
  • 1tbsp Oil

Method:

Preheat a medium-sized frying pan on medium heat with the oil (helps stop the pancake sticking).

Mash the banana in a mixing bowl using a fork, removing as many lumps as possible.

Add the 2 eggs to the mashed banana and whisk well with the fork until completely mixed together.

There will be small lumps of banana in the mix depending on how ripe your banana is and how well you mashed it.

Add the cinnamon and mix thought.

Add the mixture into the hot pan and leave to cook through before flipping.

I find it helpful after 2 minutes of cooking to run a spatula around the edge of the pancake every 30-50 seconds to help when it comes to flipping it. It also helps see how cooked it is.

Once it is cooked completely on one side flip it over and continue cooking for another 3-4 minutes or until cooked how you wish. Then serve.

I like to slice Baby bears pancake into smaller squares to make it easier for him to eat. I also put some other fruit on the side for him to enjoy.
